Baseline:

  • 4239 Eligible students from 16 Title 1, majority Hispanic elementary schools in the Greater Austin area

  • 78% consented to be in the study

  • 95% of children completed baseline measurements

  • 92% of parents completed baseline survey

  • 35% of children completed baseline optional blood draws

  • 24% of children completed baseline optional diet recalls

Post:

  • 91% children completed post measurements

  • 45% of parents completed post surveys

  • 62% of children completed post optional blood draws

  • 64% of children complete post optional diet recalls

Descriptive Statistics:

  • 47% female

  • 65% Hispanic

  • 9y average age

  • 46% overweight/obese

  • 69% receiving Free/Reduced Lunch

  • 26% pre-diabetic

  • 68% report food insecurity

Results:

  • Intervention schools increased their vegetable intake by 20%, to almost 3 servings per day

  • Improved Glucose control in intervention schools

  • Decrease in lipids (LDL Cholesterol) in intervention schools

  • 12% increase in Time on Task (ability to focus in lessons) for intervention schools

  • Approximately 3 minute increase in moderate to vigorous physical activity and decrease of 9.4 minutes of sedentary behavior on garden days vs. non-garden days

  • Academic performance in intervention schools increased via TEA scores for STAAR Tests for intervention year
